It’s the perfect time of year for grilling.  Fire up the BBQ or indoor grill and make these deliciously easy (and healthy) grilling recipes that come together in no time for a quick weeknight meal or a tasty weekend lunch.

Greek Burger with Cucumber salad

We took a nod from the Greeks when creating this delicious burger recipe.  Instead of a hamburger bun, we opted for pita bread. Instead of ketchup and mustard, we were inspired by traditional tzatziki sauce, made from thick Greek yogurt, cucumber, mint and dill. Ingredients
  1. 1 (16 ounce) container Greek plain yogurt
  2. 1/2 cup seeded, and chopped cucumber
  3. 2 Tablespoons chopped fresh dill
  4. 1 Tablespoon  finely chopped onion
  5. 1/2 teaspoon dried mint leaves
  6. 1 pound ground turkey (97% lean)
  7. 1/2  cup chopped onion
  8. 1 teaspoon dried oregano leaves
  9. 1/2 teaspoon black pepper
  10. 1/2 teaspoon salt
  11. 1/2 cup crumbled feta cheese
  12. 4 pita bread
  13. Lettuce
  14. Sliced tomato
Instructions
  1. For Cucumber Sauce: Stir yogurt, cucumber, dill, 1 Tablespoon chopped onion and mint in a medium bowl. Cover with plastic wrap and refrigerate until ready to serve.
  2. Preheat grill to MEDIUM-HIGH heat or GRILL ZONE (ORANGE).
  3. Place turkey, feta cheese, 1/2 cup chopped onion, oregano, pepper and salt; form mixture into 4 burgers.
  4. Grill burgers covered 5 minutes on each side, until juices run clear and meat is no longer pink.
  5. Serve burgers in a pita pocket with Cucumber Sauce, lettuce and sliced tomato.

Grilled Corn and Black Bean Salad with Cilantro Lime Dressing

Corn is delicious when cooked on the grill because it takes on a smoky flavor. This salad is great on its own or served alongside tortilla chips for dipping.

Ingredients
  1. 3 Tablespoons fresh lime juice
  2. 2 Tablespoons olive oil
  3. 1 tablespoon cider vinegar
  4. 1/2 teaspoon ground cumin
  5. 1/2 teaspoon salt
  6. 4 ears corn on the cob, husked
  7. 1 can (15.5 oz.) black beans, rinsed and drained
  8. 1 green bell pepper, halved, seeded and coarsely chopped
  9. 1 cup cherry tomatoes, halved
  10. 1/4 cup chopped onion
  11. 3 Tablespoons chopped cilantro
  12. 2 Tablespoons chopped parsley
Instructions
  1. Preheat grill to medium-high heat.
  2. For lime dressing, combine lime juice, olive oil, vinegar, cumin and salt.
  3. Grill corn 12 to 14 minutes, covered, turning occasionally and brushing with lime dressing until cooked and slightly charred.
  4. Cut corn off the cob; place in a large bowl. Stir in black beans, green pepper, cherry tomatoes, onion, cilantro, parsley and remaining salad dressing. Cover with plastic wrap and refrigerate 3 hours before serving.

Grilled Angel Food Cake with Strawberries

Ingredients:

  • 1 angel food cake, purchased or home baked
  • 1/4 cup orange juice
  • 2 Tablespoons butter, melted
  • 1 quart strawberries, hulled and sliced
  • Whipped cream

Directions:

  1. Slice angel food cake horizontally into 2 rings.
  2. Stir orange juice and butter in a small bowl; brush both sides of pound cake slices evenly with mixture.
  3. Preheat grill to LOW heat or GRILL ZONE (YELLOW).
  4. Grill pound cake slices 2 to 3 minutes on each side.
  5. Slice into servings.  Top with strawberries and whipped cream

Serves: 4

Test Kitchen Tip:  Try grilling different fruits to pair with the angel food cake such as pineapple, peach, nectarine or mango.
