The official start of summer is right around the corner, but we are already in full BBQ mode. BBQ is as synonymous with summer as burgers and hotdogs, and you can never have too many recipes.

Slow Cooker Shredded Beef BBQ

Hamilton Beach® slow cooker is great for cooking homemade barbecue. Not only are you leaving the oven off (and ultimately keeping the house cool), you can make bbq in bulk to serve at summer picnics or make as your meal prep for the week. Pack it with grilled corn and a beautiful summer salad for lunches during the week (no sad desk lunch here).

Slow cooker shredded beef BBQ is a sweet, tomato-based BBQ that is perfect served with a generous helping of cornbread and cool, crunchy homemade coleslaw on a hot summer day.

In the slow cooker crock, mix tomato puree, brown sugar, apple cider vinegar, garlic, onion, paprika, mustard, crushed red pepper, salt, and black pepper. This homemade barbecue sauce is going to add tons of flavor to the meat as it cooks low and slow.

Then add boneless beef chuck roast to the crock. You’ll want to use tongs to turn the meat and make sure it’s completely coated with the sweet & tangy barbecue sauce before cooking.

Cover and cook on HIGH for 5 to 6 hours or LOW for 10 to 12 hours.

Remove the beef and transfer to a cutting board to shred. Simply use two forks to shred the meat and either transfer back to the crock to mix in with the remaining BBQ sauce or transfer to a serving bowl and add sauce.

  1. In a slow cooker crock, stir together tomato puree, brown sugar, vinegar, garlic, onion, paprika, mustard, salt, dried red pepper and black pepper.
  2. Add roast to crock and turn to coat with tomato sauce mixture.
  3. Cover and cook on HIGH for 5 to 6 hours or LOW for 10 to 12 hours.
  4. Remove roast to a cutting board. Using 2 forks, shred meat and add to serving bowl. Stir in enough sauce to desired consistency.

Reuben sandwiches are a New York deli classic and a great use for leftover St. Patrick’s Day corned beef. It’s no wonder this sandwich is counted among many people’s favorites. A great reuben with a side of chips and a soda is about as perfect a lunch combo as one can create.

If you’ve never had a reuben sandwich before, we a) are very sad for you and b) think you should stop reading here and run to the nearest deli counter. Are you back? Okay, good, we’re all on the same page about how delicious the reuben is. The origin of the sandwich is unclear. One story credits a grocer in Omaha and one, a deli owner in New York city (I’ll let you guess which side of the fence we stand on). Wherever its true origins, we’re glad it exists because it’s a favorite in our test kitchen.

The grilled sandwich contains a stack of corned beef, sauerkraut, swiss cheese and Russian or Thousand Island dressing layered between slices of buttered rye bread. It’s typically grilled until everything is warm and melted, but we love the way the cheese melts and the bread gets toasty in our panini press. The panini press’s gorgeous grill marks add to the spectacle of gooey, dripping goodness.

You’ll love the panini twist on this New York classic – just don’t try to eat this delicious sandwich without some napkins nearby.

Corned beef and cabbage is about as classic a St. Patrick’s Day dish as you can make. Corned beef is slow cooked and served alongside cabbage with optional ingredients like potatoes, carrots and onions. Though corned beef and cabbage is Irish at heart, it’s not something the Irish ate often back in the day. Instead, during the 18th century, the beef-producing country exported the expensive meat to neighboring countries and dined on pork, veggies and dairy instead. Who knew?

Today, most Irish don’t consider corned beef a native dish. And believe me, we asked our resident Irishman. Rather, the salt-cured meat as we know it now is an Irish-American and New York delicatessen fusion. It’s become a St. Paddy’s favorite as part of Irish-American culture, since corned beef was a cheaper substitute for bacon in the traditional Irish dish bacon and cabbage. (Wikipedia)

Regardless of its origins or authenticity, we’re big fans of corned beef – both in sandwiches and this corned beef and cabbage dish – so we’re happy to make it at home once a year each March. To keep things as quick and simple as possible, we make our recipe in the slow cooker.

The corned beef, cabbage, potatoes, carrots and onions go in the crock with some pickling spices and water until everything is cooked through but still vibrant. It smells amazing as it cooks, so you’ll be hungry all day. When the table is set, the meat and veggies get drained and served for a delicious St. Patrick’s Day meal.

There’s only one pot to clean up and the leftovers (if there are any) make a delicious reuben sandwich. Serve the corned beef and cabbage with a good Irish beer. We’re not into the green beer, but prefer a nice stout to go with the theme: a deliciously hearty St. Patrick’s Day.

Instructions
  1. Rinse corned beef and place in 5-6 quart slow cooker.
  2. Sprinkle pickling spices over meat and cover with water.
  3. Cover slow cooker and cook on HIGH for 5 hours or LOW for 10 hours.
  4. Add cabbage, carrots, potatoes and onions to slow cooker with corned beef and cook on HIGH for an additional hour. If using LOW, switch to HIGH.
Recipe Notes

To serve, cut corned beef across the grain and plate over cabbage.
Serve with spicy brown mustard or horseradish, if desired.
Pickling spices can be found in the spice isle of major grocery stores.
For variety, try yellow or purple potatoes.

Instructions
  1. In a large bowl, combine flour, salt and pepper; add beef. Toss to coat.
  2. In a large skillet over medium-high heat, heat oil. Add half of the beef. Cook until browned on all sides. Repeat with remaining beef.
  3. Place browned beef in slow cooker crock. Stir in tomatoes, beef broth, wine, onion soup mix and basil until well blended.
  4. Add potatoes, carrots, onion and mushrooms.
  5. Cover slow cooker and cook on HIGH for 6 hours or LOW for 12 hours until meat is tender.
Recipe Notes

If you have a slow cooker with stove-top safe cookware, substitute the cookware for the skillet in the directions above. After browning, place cookware in base. Cover and cook as directed in recipe.

  1. In a large bowl, combine ground beef, onion, eggs, cracker crumbs, 1/4 cup ketchup, milk, Worcestershire sauce, salt, pepper and garlic powder.
  2. Line the slow cooker crock with nonstick aluminum foil.
  3. Shape the meat mixture into a loaf shape and place in foil-lined slow cooker crock.
  4. In a small bowl, combine remaining ketchup, brown sugar and mustard. Spread over top of meatloaf.
  5. Cover slow cooker and cook on HIGH for 2 1/2 to 3 hours or LOW for 4 to 5 hours. If using a slow cooker with a probe, cook until meatloaf reaches 160°F.
