- 1 Brown rice english muffin
- 3 oz extra firm tofu
- 1 tablespoon herb & garlic cashew cheese
- 1/4 cup baby spinace
- pinch Sea salt
- pinch black pepper
- Heat up Sandwich Maker
- Slice tofu approx. 1 inch wide
- Split English muffin in half. Spread cashew cheese on both top and bottom bun. Add bottom bun to the bottom pan and place spinach on top.
- Add the tofu to the top pan, sprinkle salt and pepper. Place other half of bun on top of tofu.
- Close sandwich maker and let sandwich cook for 5 to 7 minutes.
- Carefully remove the sandwich from sandwich maker. Enjoy!
