The Breakfast Sandwich Maker is one of my favourite appliances. I’m sure you’re thinking “she’s biased,” and of course I am to an extent, but I am being honest when I say I use the Breakfast Sandwich Maker multiple times a week (and have gifted them to family and friends. You’re welcome.) When I’m rushing to get out of the door on time (sometimes unsuccessfully, sorry boss!), the Breakfast Sandwich Maker is a huge help. I can finish brushing my teeth or putting on my shoes while it cooks and take it to-go in the car.
But if you’re looking for another option or if you’re looking to cut out carbs try this two egg omelette in the Breakfast Sandwich Maker.
Instead of an English muffin half, put one scrambled egg in the bottom ring and top with crumbled bacon or breakfast sausage (or both), chopped bell peppers, and your favourite cheese.
Bring down the cooking plate and pour in another scrambled egg. Set the timer for about 3-4 minutes.
When the egg is cooked, slide the cooking plate out and the top egg drops, creating a fluffy omelette. This simple, low-carb breakfast option takes the “sandwich” out of the Breakfast Sandwich Maker.
