Slow cooker chili mac combines two of your favourite dinners into one satisfying meal. Does your family celebrate Taco Tuesday every week? Do the kids always request pasta nights? Slow cooker chili mac (also known as taco pasta) gives you the best of both worlds. And it couldn’t be easier to make in your Hamilton Beach® slow cooker.

In a large skillet over medium-high heat, saute onions and garlic for about 3 minutes until the onions are translucent. Add a pound of ground turkey (you could substitute ground beef if you prefer) to the skillet and saute until browned.

Add the meat mixture to the slow cooker crock with the remaining ingredients – 2 cans of diced tomatoes and green chiles, 1 can of crushed tomatoes, 1 can of kidney beans, an additional can of green chiles, chili seasoning, salt, and black pepper.

Cover the slow cooker crock and cook on HIGH for 3 ½ to 4 hours or on LOW for 7 to 8 hours. When the meat sauce is finished cooking, stir in a pound of cooked pasta and some cheese (feel free to be very generous with this step). Let the cheese melt a little before serving.

  5. Stir in cooked pasta and 1 cup shredded cheese before serving. Let stand on WARM for 15 minutes. Sprinkle with remaining cheese, if desired.

This slow cooker white turkey chili leaves the beef, tomato based chilis behind and incorporates lean, ground turkey and 5 (that’s right 5) cans of beans. Combined with corn, broth, and an array of spices in the slow cooker, this chili is as hearty as the beef chilis you usually make.

We topped our white turkey chili with jalapenos for a little spice and tortilla strips for crunch. We couldn’t resist adding avocado, sour cream, and cheese either. If there’s not cheese on top you’re doing it wrong. All you need is a big piece of homemade cornbread for dunking. It’s time to plug in the slow cooker and embrace chili weather.

  1. In a large skillet over medium-high, heat oil. Add onion, garlic and jalapeno peppers. Cook until the onion is translucent, about 4 minutes. Transfer to crock.
  2. Add ground turkey to skillet, stirring until turkey is completely cooked, about 6 minutes. Add turkey, broth, beans, corn, chili powder, cumin, oregano, salt, black pepper and cayenne pepper.
  3. Cover slow cooker and cook on HIGH for 4 to 4 1/2 hours or LOW for 7 to 7 1/2 hours.
  4. During last 30 minutes, in a medium bowl, stir half and half and cornstarch until cornstarch is dissolved.
  5. Pour half and half mixture into chicken mixture, stirring until mixture thickens.
  6. Serve with sour cream, shredded cheese and chopped fresh cilantro.

Slow Cooker Chili Con Carne
Serves 10

 

Ingredients
  • 2 pounds hot Italian sausage, removed from casing
  • 2 pounds lean ground beef
  • 2 cloves garlic, minced
  • 1 large green pepper, cubed
  • 1 large onion, chopped
  • 1 jalapeno pepper, minced
  • 3 cups beef broth
  • 2 packages (about 2 ounces each) chili seasoning
  • 2 cans (16 ounces each) kidney beans, drained
  • 2 cans (14.5 ounces each) diced tomatoes, undrained
  • 1 can (6 ounces) tomato paste
  • Shredded cheddar cheese, sliced jalapenos, sour cream, if desired

 

Instructions
  1. Crumble sausage and ground beef into a large skillet. Over medium-high heat, brown sausage and ground beef. Drain fat.
  2. Add garlic, green pepper, onion and jalapeno to meat mixture and cook until onion is softened. Transfer meat and onion mixture to slow cooker crock.
  3. Add remaining ingredients. Stir to combine.
  4. Cover and cook on HIGH for 4 hours or LOW for 8 hours.
  5. Serve with shredded cheddar cheese, sliced jalapenos and sour cream, if desired.
